Watermelon Jelly
A colorful chilled jelly made with fresh watermelon juice, lime and gelatin for a light fruity dessert.

Watermelon Jelly is a light and refreshing dessert that captures the sweet flavor and vibrant color of fresh watermelon in a smooth chilled form. Fresh lime juice adds a subtle tartness that keeps the jelly from tasting overly sweet, while gelatin gives it a delicate, wobbly texture. This dessert is especially enjoyable during warm weather and can be prepared ahead for parties or family meals. For the clearest texture, strain the watermelon juice before mixing it with the gelatin and allow the jelly enough time to chill completely before serving.
