Date Tamarind Chutney

Date tamarind chutney, also known as imli khajur chutney, is a classic Indian condiment with a delicious balance of sweetness, tanginess and gentle spice. Soft dates and jaggery mellow the sharp flavor of tamarind, while roasted cumin, ginger and chili add warmth and complexity. This chutney is commonly served with chaat, samosas, pakoras, dahi puri and many other Indian snacks. For the smoothest texture, cook the dates and tamarind until completely soft, blend the mixture thoroughly and strain it if desired. The chutney thickens slightly as it cools, so avoid reducing it too much during cooking.
