Cherry Danish Pastry

Ingredients
- 2 cups Fresh Cherries
- 2 sheets Puff Pastry
- 1 cups Cream Cheese
- 0.33 cups Sugar
- 1 tablespoon Cornstarch
- 1 tablespoon Fresh Lemon Juice
- 1 teaspoon Vanilla Extract
- 1 large Egg

Instructions
Wash, pit and halve the cherries.

Cook the cherries with half of the sugar, lemon juice and cornstarch until thick and glossy.

Allow the cherry filling to cool slightly.

Beat the cream cheese with the remaining sugar and vanilla until smooth.

Cut the puff pastry into rectangles and lightly score a border around each piece.

Spread cream cheese filling in the center of each pastry and top with the cherry mixture.

Brush the pastry edges with beaten egg.

Bake at 200°C until puffed and golden brown.
