Avocado Tacos
Fresh vegetarian tacos filled with creamy avocado, seasoned black beans, corn, tomato salsa and lime.

Avocado Tacos are a fresh and colorful vegetarian main course packed with creamy avocado, seasoned black beans, sweet corn and juicy tomato salsa. Lime juice and cilantro brighten the filling, while warm corn tortillas provide the perfect base. These tacos are quick enough for weeknight dinners but flavorful enough for casual gatherings. Warm the tortillas just before assembling and add the avocado at the end so it stays fresh and creamy.
Ingredients
- 2 medium Ripe Avocados
- 8 small Corn Tortillas
- 1.5 cups Cooked Black Beans
- 1 cups Sweet Corn Kernels
- 2 medium Tomatoes
- 0.25 cups Red Onion
- 0.25 cups Fresh Cilantro
- 3 tablespoons Fresh Lime Juice
- 1 tablespoon Olive Oil
- 0.5 teaspoon Ground Cumin
- 0.5 teaspoon Smoked Paprika
- 0.5 teaspoon Salt

Instructions
Heat the olive oil in a skillet and add the black beans, corn, cumin, smoked paprika and half of the salt.

Cook until the beans and corn are warmed through and lightly seasoned.

Dice the tomatoes and red onion and combine them with cilantro, half of the lime juice and the remaining salt.

Slice the avocados and drizzle them with the remaining lime juice.
⏱️ 3 minutes
Warm the corn tortillas in a dry skillet.
⏱️ 2 minutes
Fill each tortilla with the bean mixture, avocado slices and fresh tomato salsa.

Serve immediately with extra lime wedges if desired.
