Avocado Quesadilla
A crispy golden quesadilla filled with creamy avocado, melted cheese, black beans, corn and fresh herbs.

Avocado Quesadilla combines creamy avocado with melted cheese, seasoned black beans and sweet corn inside a crisp golden tortilla. The avocado adds richness while lime juice and cilantro keep the filling fresh and vibrant. Ingredients
- 2 medium Ripe Avocados
- 4 large Flour Tortillas
- 1.5 cups Shredded Cheddar Cheese
- 1 cups Cooked Black Beans
- 1 cups Sweet Corn Kernels
- 0.25 cups Fresh Cilantro
- 2 tablespoons Fresh Lime Juice
- 0.5 teaspoon Ground Cumin
- 1 tablespoon Olive Oil
- 0.25 teaspoon Salt

Instructions
Mash the avocados lightly with the lime juice and salt.

Combine the black beans, corn, cumin and cilantro in a bowl.

Spread mashed avocado over one half of each tortilla.

Top with the bean and corn mixture and shredded cheese.

Fold each tortilla in half and press gently.

Heat a little olive oil in a skillet over medium heat and cook each quesadilla until golden and crisp on both sides.
