Ingredients
- 2 medium Ripe Avocados
- 3 cups Cooked Brown Rice
- 2 cups Cooked Black Beans
- 1.5 cups Sweet Corn Kernels
- 2 medium Tomato
- 0.5 cups Red Onion
- 0.5 cups Fresh Cilantro
- 3 tablespoons Fresh Lime Juice
- 1 tablespoon Olive Oil
- 1 teaspoon Ground Cumin
- 0.5 teaspoon Smoked Paprika
- 0.5 teaspoon Salt

Instructions
Warm the black beans with the olive oil, cumin, smoked paprika and half of the salt.

Cook or warm the corn until tender.

Dice the tomatoes, red onion and avocados and chop the cilantro.

Toss the avocado gently with a little lime juice to help preserve its color.

Divide the cooked rice among four serving bowls.

Arrange the seasoned beans, corn, tomato, red onion and avocado over the rice.
