Homemade Almond Butter

Homemade Almond Butter is surprisingly simple to prepare and requires little more than roasted almonds and patience. As the almonds are processed, they first become crumbs, then a thick paste and finally a smooth butter as their natural oils are released. A small amount of salt enhances the flavor, while optional honey can add mild sweetness. Warm almonds blend more easily than completely cooled ones, so processing them shortly after roasting helps speed up the transformation. Store the finished almond butter in a clean airtight jar and stir if natural oil separation occurs.
