As the almonds are processed, they first become crumbs, then a thick paste and finally a smooth butter as their natural oils are released. A small amount of salt enhances the flavor, while optional honey can add mild sweetness. Warm almonds blend more easily than completely cooled ones, so processing them shortly after roasting helps speed up the transformation. Store the finished almond butter in a clean airtight jar and stir if natural oil separation occurs.

Instructions
Spread the almonds on a baking tray and roast at 175°C until fragrant.
