Almond Kulfi

Almond Kulfi is a traditional Indian frozen dessert with a dense, creamy texture and rich almond flavor. Unlike regular ice cream, kulfi is made by slowly reducing milk until concentrated before combining it with ground almonds, sugar, cardamom and saffron. The mixture is frozen in molds without churning, creating its characteristic firm yet creamy consistency. Toasted almond pieces add extra texture and nuttiness. Allow the cooked mixture to cool fully before freezing, and dip the molds briefly in warm water to release the kulfi easily.

  • 0.75 cups Almonds
  • 0.5 cups Sugar
  • 0.5 teaspoon Ground Cardamom
  • 1 pinch Saffron
  • 2 tablespoons Chopped Almonds

Instructions

Bring the milk to a boil and then reduce to a gentle simmer.

Simmer while stirring regularly until the milk reduces noticeably and thickens.

Grind the almonds and stir them into the reduced milk.

Add sugar, cardamom and saffron and cook briefly until well combined.

Cool the mixture completely and stir in chopped almonds.
