Almond Kheer

Almond Kheer is a creamy Indian dessert in which finely ground almonds are slowly simmered with milk until the mixture becomes rich and slightly thick. Cardamom and saffron add fragrance while chopped nuts provide texture. Unlike traditional rice kheer, this version allows almonds to take center stage and produces a naturally luxurious consistency. It can be served warm or chilled and is especially popular during festivals and celebrations. Simmer the milk gently and stir regularly to prevent scorching and to develop a smooth, concentrated flavor.
