Almond Kheer

Almond Kheer is a creamy Indian dessert in which finely ground almonds are slowly simmered with milk until the mixture becomes rich and slightly thick. - 5 cups Whole Milk
- 0.5 cups Sugar
- 0.5 teaspoon Ground Cardamom
- 1 pinch Saffron
- 2 tablespoons Chopped Pistachios

Instructions
Soak the almonds, peel them and grind them into a fine paste with a little milk.
⏱️ 20 minutes
Bring the remaining milk to a gentle simmer in a heavy saucepan.

Add the almond paste and cook over low heat while stirring regularly.
⏱️ 15 minutes
Add sugar, cardamom and saffron and continue simmering until slightly thickened.

Garnish with pistachios and serve warm or chilled.
