Almond Halwa

Almond Halwa, also known as Badam Halwa, is a rich Indian dessert prepared by slowly cooking ground almonds with milk, ghee and sugar. Cardamom and saffron give the halwa its classic festive aroma while the almonds create a dense, luxurious texture. It is commonly served during celebrations, weddings and special occasions. Stirring continuously over low to medium heat is important because the mixture thickens gradually and can stick to the pan. The halwa is ready when it becomes glossy, pulls away from the sides and the ghee begins to separate slightly.

  • 0.5 teaspoon Ground Cardamom
  • 1 pinch Saffron

Instructions

Soak the almonds in hot water, peel them and drain thoroughly.

Blend the almonds with milk into a slightly coarse paste.

Heat half the ghee in a heavy pan and add the almond mixture.

Cook while stirring continuously until the mixture begins to thicken.

Add sugar, cardamom and saffron and continue cooking.

Gradually add the remaining ghee and cook until the halwa becomes glossy and leaves the sides of the pan.
