Almond Burfi

Almond Burfi, also known as Badam Barfi, is a classic Indian sweet made from finely ground almonds, sugar and ghee. The mixture is cooked until thick, scented with cardamom and then spread into a tray to set before being cut into neat squares or diamonds. Almonds give the burfi a soft yet slightly dense texture and a naturally rich flavor. It is especially popular during festivals and celebrations. Cook the mixture patiently and stir continuously so it does not catch on the bottom of the pan.

  • 1 cups Sugar
  • 0.5 cups Water
  • 3 tablespoons Ghee
  • 0.5 teaspoon Ground Cardamom
  • 1 pinch Saffron

Instructions

Soak the almonds in hot water, peel them and dry them thoroughly.

Grind the almonds into a fine meal.

Cook sugar and water in a heavy pan until the sugar dissolves.

Add the ground almonds and cook while stirring continuously.

Add ghee, cardamom and saffron and continue cooking until the mixture leaves the sides of the pan.
