Almond Brittle is a crisp, crunchy confection made by combining toasted almonds with hot caramelized sugar. Once spread thin and cooled, the candy hardens into a glossy sheet that can be broken into irregular pieces. The toasted almonds balance the sweetness with a deep nutty flavor, making brittle an excellent holiday treat or homemade gift. Because caramel reaches very high temperatures, work carefully and prepare the baking sheet before starting. Spread the mixture quickly once the almonds are added because it begins to set almost immediately.

  • 1 tablespoon Butter
  • 0.25 teaspoon Baking Soda

Instructions

Toast the almonds lightly in a dry pan and set aside.

Combine sugar and water in a saucepan and cook without stirring until deep golden.
