Potato Tandoori Bites are a flavorful vegetarian appetizer inspired by classic tandoori cooking. Parboiled baby potatoes are coated in a thick yogurt marinade flavored with ginger, garlic, cumin, coriander, paprika and garam masala, then roasted at high heat until lightly charred around the edges. The result is smoky, tangy and warmly spiced. These bites are perfect for parties or as a starter with mint chutney. Using thick yogurt keeps the marinade clinging to the potatoes, while a hot oven creates the characteristic roasted finish.

- 0.75 cups Thick Plain Yogurt
- 1 tablespoon Fresh Ginger
- 3 cloves Garlic
- 1 teaspoon Paprika
- 1 teaspoon Ground Cumin
- 1 teaspoon Ground Coriander
- 1 teaspoon Garam Masala
- 0.25 teaspoon Ground Turmeric
- 2 tablespoons Lemon Juice
- 1 tablespoon Cooking Oil
- 0.75 teaspoon Salt
- 2 tablespoons Fresh Cilantro

Instructions
Boil the baby potatoes until just tender, then drain and cool slightly.

Mix yogurt, ginger, garlic, paprika, cumin, coriander, garam masala, turmeric, lemon juice, oil and salt.

Coat the potatoes thoroughly in the yogurt marinade.

Allow the coated potatoes to rest so the flavors develop.

Arrange the potatoes on a lined baking tray with space between them.
