Potato Stuffed Paratha, commonly known as Aloo Paratha, is a beloved Indian flatbread filled with seasoned mashed potatoes. The soft whole-wheat dough surrounds a savory mixture flavored with cumin, garam masala, cilantro and green chili before being rolled and cooked on a hot griddle. It makes a hearty breakfast, brunch or lunch and is traditionally served with yogurt, pickle or chutney. Keep the potato filling dry and completely cooled before stuffing so the parathas roll easily without tearing.

- 4 medium Potatoes
- 2.5 cups Whole-Wheat Flour
- 1 cups Water
- 0.25 cups Fresh Cilantro
- 1 small Green Chili
- 1 teaspoon Ground Cumin
- 0.75 teaspoon Garam Masala
- 1 teaspoon Salt
- 4 tablespoons Ghee

Instructions
Mix whole-wheat flour, half the salt and enough water to form a soft dough.

Cover the dough and let it rest.

Boil the potatoes until tender, then cool, peel and mash them.

Mix the potatoes with cilantro, green chili, cumin, garam masala and remaining salt.

Divide the dough and filling into equal portions.

Roll a dough portion, place potato filling in the center, seal and gently roll into a flat paratha.

Cook each paratha on a hot griddle with a little ghee until golden brown on both sides.
