Mustard seeds, curry leaves, turmeric and green chili give the dish its characteristic flavor and golden color, while lemon juice adds freshness just before serving. Poha cooks quickly and is ideal for busy mornings or a light evening meal. Rinse the flattened rice briefly rather than soaking it for too long so the grains soften without becoming mushy.

- 2 medium Potatoes
- 2 cups Thick Poha
- 1 medium Onion
- 0.25 cups Peanuts
- 1 small Green Chili
- 1 teaspoon Mustard Seeds
- 10 leaves Curry Leaves
- 0.5 teaspoon Ground Turmeric
- 2 tablespoons Cooking Oil
- 2 tablespoons Lemon Juice
- 0.75 teaspoon Salt
- 0.25 cups Fresh Cilantro

Instructions
Rinse the poha briefly under water, drain well and set aside to soften.

Peel and dice the potatoes into small cubes.
⏱️ 4 minutes
Heat oil in a pan and cook the peanuts until lightly toasted.
⏱️ 3 minutes
Add mustard seeds, curry leaves, green chili and onion and cook until softened.
⏱️ 5 minutes
Add the potatoes, turmeric and salt and cook until the potatoes are tender.
⏱️ 10 minutes
Fold in the softened poha and cook gently until heated through.
⏱️ 4 minutes
Finish with lemon juice and cilantro before serving.
