Potato Poha

Potato Poha is a comforting Indian breakfast made with flattened rice, tender potato cubes, peanuts and a simple aromatic tempering. Mustard seeds, curry leaves, turmeric and green chili give the dish its characteristic flavor and golden color, while lemon juice adds freshness just before serving. Poha cooks quickly and is ideal for busy mornings or a light evening meal. Rinse the flattened rice briefly rather than soaking it for too long so the grains soften without becoming mushy.
