Potato Cutlets are a popular Indian snack made from mashed potatoes mixed with vegetables, fresh herbs and aromatic spices. The mixture is shaped into patties, coated lightly with breadcrumbs and pan-fried until crisp outside while remaining soft inside. These cutlets are delicious with mint chutney, ketchup or yogurt dip and work well as an appetizer, tea-time snack or sandwich filling. Using cooled mashed potatoes makes the mixture easier to shape and helps the patties hold together during cooking.

- 0.5 cups Green Peas
- 0.5 cups Carrot
- 1 cups Breadcrumbs
- 0.25 cups Fresh Cilantro
- 1 teaspoon Garam Masala
- 0.5 teaspoon Red Chili Powder
- 0.5 teaspoon Ground Cumin
- 0.75 teaspoon Salt
- 4 tablespoons Cooking Oil

Instructions
Boil the potatoes until tender, then cool, peel and mash them.

Cook the peas and carrot until just tender.

Mix the potatoes, vegetables, cilantro, garam masala, chili powder, cumin and salt.

Shape the mixture into small flat cutlets.

Coat each cutlet lightly with breadcrumbs.

Pan-fry the cutlets in oil until crisp and golden on both sides.
