Aloo Matar
A comforting North Indian potato and green pea curry simmered in a fragrant tomato-onion gravy.

Aloo Matar is a comforting North Indian curry made with tender potatoes and sweet green peas in a warmly spiced tomato-onion gravy. Cumin, coriander, turmeric and garam masala provide depth, while ginger and garlic add an aromatic foundation. The curry is delicious with roti, naan, paratha or steamed rice and works well for both everyday meals and family gatherings. Simmer the potatoes directly in the gravy so they absorb the spices as they cook, then add the peas toward the end to preserve their color and sweetness.
