- 1 medium head Cauliflower
- 2 medium Tomatoes
- 1 medium Onion
- 1 tablespoon Fresh Ginger
- 2 tablespoons Cooking Oil
- 1 teaspoon Cumin Seeds
- 0.5 teaspoon Ground Turmeric
- 1.5 teaspoons Ground Coriander
- 0.75 teaspoon Garam Masala
- 0.5 teaspoon Red Chili Powder
- 0.75 teaspoon Salt
- 0.25 cups Fresh Cilantro

Instructions
Peel and cube the potatoes and cut the cauliflower into medium florets.

Heat oil in a large pan and add the cumin seeds.

Add the onion and ginger and cook until the onion softens.

Add the tomatoes, turmeric, coriander, chili powder and salt and cook until the tomatoes break down.

Add the potatoes and cauliflower and stir until evenly coated with the spice mixture.

Cover and cook over medium-low heat, stirring occasionally, until the vegetables are tender.
